There’s no better time than fall to cosy up in the kitchen and indulge in the rich, comforting flavours of autumn. From hearty pumpkin meals to spiced desserts, the fall season offers an abundance of delicious ingredients that inspire me in the kitchen. So lets celebrate the harvest season together with a list of my favourite autumnal recipes 🥧🍎🍂🍐

Caramelised Pear Choc Chip Cookie Skillet

  • Recipe:
    Ingredients:
    1 tbs butter
    4 sliced pears
    1/3 brown sugar
    1 tbs vanilla extract
    2 cups oats
    1/2 cup flour
    1 cup brown sugar
    1 tbs baking soda
    3/4 cup melted coconut oil
    2 eggs
    2 tsp vanilla extract
    1 cup dark choc chips
  • Start by adding 1 tbs of butter to a medium skillet, let that melt and add 4 sliced pears and 1/3 cup of brown sugar. Cook for 5 minutes, stirring pears until caramelised and soft. Remove from the heat and stir in 1 tbs of vanilla extract. Reserve a few tbs of the sauce for later.
  • Whilst that’s cooling, in a mixing bowl add 2 cups of oats, 1/2 cup flour, 1 cup of brown sugar, 1 tbs baking soda, 3/4 cup melted coconut oil, 2 eggs and 2 tsp vanilla extract and beat until your dough is combined. 
  • Mix in 1 cup of dark chocolate chips and sprinkle this dough over the pears. 
  • Bake on 180 degrees for about 20-25 minutes and let it rest for 5 minutes. 
  • Serve with vanilla ice cream and 2 tbs of that reserved caramel pear sauce.
